Chocolate Chip Cookie Dough Protein Squares

Better than any protein bar you can buy, these bars are dense and chocolatey with chunks of dark chocolate. They are perfect for a delicious protein snack on-the-go!
Buying protein bars can get expensive, not to mention the questionable ingredients found in some of them. Know exactly what’s in your protein bar by making your own (and save a few bucks while you’re at it!)

Throw them in your bag for a convenient after-work out snack or to help you power through a busy day (or hike)!

Ingredients:

▪6 tbsp. raw cashew butter

▪ 3 tsp. vanilla almond or cashew milk

▪2 tsp. coconut palm nectar* or honey

▪1/3 cup organic dark chocolate, chopped

▪1 tbsp. coconut flour

▪3 to 4 scoops of vegan protein powder

(vanilla or chocolate flavor – whey protein

can be substituted with vegan protein powder)

Directions:

Combine cashew butter, coconut palm nectar, coconut flour, dark chocolate chunks and protein powder in mixing bowl with a spatula. Slowly add the almond milk until mixture comes together like dough. Add a bit more coconut flour if you find your dough too wet. If too dry, add a little bit of water or almond milk

Once fully combined, press into a square baking pan and place in refrigerator to set overnight. Cut into 10-12 bars and wrap individually. Store in fridge.

*Raw coconut nectar is made from the sweet sap produced by the coconut palm blossom. It is an alternative natural low glycemic sweetener, as it’s not refined it has some vitamins and minerals still intact.
